1.Autoclaves are made from stainless steel and act as a large pressure cooker. Agave is stacked inside the autoclave, similar to the horno, and agave piñas are cooked in temperatures that can reach 248 degrees Fahrenheit for 6-24 hours. 2.This autoclave cooking method can be great, and some master distillers are better at using it than others. German Gonzalez of t1 is the best in my opinion, in mastering the temperatures and timing, in cooking this way. Gonzalez' cooking is slow-roasting (steamed) in stainless steel autoclave ovens for 20 hours. Sophie Decobecq of Calle 23, another master of the autoclave says the agave pinas go through a total cooking time of approximately 16 hours (this time includes warming and cooling times), as it manages to get the agave heart cooked, but the outside of the plant is not overcooked or burned.
3. The autoclave uses steam and pressure to cook agave in 7-12 hours.
Autoclave is a common cooking method because it is much quicker than the more traditional method of slow cooking in a brick oven known as a horno which can take 36-72 hours. Although autoclave is faster than horno, it still maintains the essence and flavor of the agave.
Some commercial distillers have moved to the dreaded diffuser to cook the agave. A diffuser is the fastest way to cook agave but the least desirable. It's used acids to strip the sugars and leaves a chemical and bitter taste in the tequila with no essence of the original agave. This is the fastest and cheapest method for cooking agave but leaves the tequila void if any flavor of the original agave. To make diffuser tequila more desirable, additives such as sweetness, colors and flavor are added. Keep away from diffuser sludge tequila and stick with Horno or autoclave.
